Red Velvet Cake

Cake

  • 1 1/2 cups cake flour
  • 1/2 teaspoon baking soda
  • 1 Tablespoons natural unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 56g unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 cup olive oil
  • 2 eggs, room temperature and separated
  • 1/2 Tablespoons vanilla extract
  • 1/2 teaspoon apple cider vinegar
  • liquid or gel red food coloring
  • 1/2 cup milk + juice of 1/4 of a lemon, room temperature

Cream Cheese Frosting

  • 225g cream cheese, softened to room temperature
  • 56g unsalted butter, softened to room temperature
  • 1 cup powdered sugar
  • 1 1/2 Tablespoons cream
  • 1 teaspoons vanilla extract
